A Creamy Potato Salad | The Ultimate BBQ Side Dish
A few weeks ago, Tom and I hosted a BBQ for my side of the family and while they bought the meat, we provided drinks and side dishes to go alongside the food. One of those side dishes, although my mum brought round her famous, homemade couscous, was a potato salad and I'm honestly super impressed and quite chuffed with how it all turned out.
It's a variation of a recipe I found online, specifically on BBC Good Food. But this is my own take on the classic potato salad, using only the mayonnaise, potatoes and parsley from the original recipe. If you'd like to know how to make this yourself, which is super simple, then keep on reading :)

Cook Time: 15 mins
Serves: 7-8
Ingredients
*800g new potatoes
*3 tbsp of mayonnaise
*2 red onions, finely chopped
*3 tbsp olive oil
*1 tbsp cider vinegar
*Handful of parsley, roughly chopped
Method
1. Chop the new potatoes into quarters and bring to the boil, check that they're just soft and not mushy. Once you're satisfied that they're cooked through, drain them thoroughly and leave to stand until they go cold.
2. Tip your cooled potatoes into a large bowl and add the olive oil. Here, make sure you give it a good stir, ensuring you coat the majority of the potatoes. Once this is done, add the mayonnaise, you can use full or low fat mayo - I used the low fat option. Again, stir thoroughly, making sure every single potato chunk is coated in mayonnaise.
3. Tip in the red onions, which should have been finely chopped, and stir until they're evenly distributed throughout the dish. Once you're happy, add your cider vinegar and a handful of roughly-chopped parsley then mix again.
4. When you're satisfied with that, garnish the bowl with some leftover parsley and serve. If you're prepping for the next day, be sure to keep it in the fridge until it's time to bring it out and put it on the table.
It's important to note that you should keep this dish for no longer than three days. Keep covered and refrigerated until that point. This dish is not suitable for freezing. Ideal for use alongside salad, couscous, anti-pasti foods and BBQ dishes.
