Semi-Naughty Breakie | Blueberry Pancakes
Breakfast is the most important meal of the day, but it's often boring or rushed. SO I thought I'd combine the most simple of recipes with the most important meal of the day and create a post that will have you making blueberry pancakes for breakie tomorrow. Pancakes aren't necessarily the healthiest of foods, but blueberries are right? So you don't have to feel as guilty for having eaten one! So lets show you how to make them :)
Prep Time: 15 mins
Cook Time: 20 mins
Serves: 10
Ingredients
*200g Self Raising Flour
*1 Egg
*1 tsp Baking Powder
*150g Blueberries
*300ml of Milk
*25g Unsalted Butter
*Pinch of Salt
*Golden/Maple Syrup (optional)
*Sun Flower Oil/Butter (for the pan)
Method
1) Mix the flour, baking powder and the pinch of salt in a large bowl.
2) Take the egg and beat it into the entire 300ml of milk.
3) Take the bowl of dry ingredients and create a well in the centre.
4) Pour the egg and milk mixture into it, whisk until it forms a smooth, thick batter. (TIP: sieve the flour first to make the smoothing process easier). Then tip in the 150g of blueberries and distribute them well throughout the mixture. You could hold some back for sprinkling.
5) Take a table spoon or a ladle and scoop up some of the mixture, then pour it into the centre of your frying pan. Ensure the pan is hot so the mixture doesn't spread across the entirety of the pan. The circle you create should be no more than 7cm across.
6) Turn the heat down to a medium setting and let each side of the pancake cook for 3 mins, or until small bubbles start popping on top.
7) As soon as the pancake is done, place it on a preheated plate and put tin foil over the top to help keep the food warm until you've used up all of the batter.
8) Once they've all cooked, take a couple of pancakes and stack them on a plate.
9) Drizzle on some golden or maple syrup and sprinkle some blueberries on top so they stick to the syrup you've poured.
10) Sit down and enjoy!
