A Recipe | Healthy Garlic Chicken, New Potatoes & Savoy Cabbage

We're all on the lookout for something quick, simple, tasty, yet affordable to cook for dinner and I think I've found just the right thing. I'ts nutritious and healthy, but doesn't break the bank when it comes to your weekly food shop. So how can you make this delicious dish yourself? Let me tell you!

Prep time: 5 mins

Cook time: 30 mins

Serves: 2

Ingredients

*2 chicken breasts
*300-400g new potatoes
*200g mushrooms
*Savoy cabbage
*4 garlic cloves, pressed
*400ml chicken stock

Method

1. Take out a large frying pan and use some rapeseed oil to start, then place the chicken breasts in the plan and allow to cook until the meat is white throughout the breast
2. Peel and press two cloves of garlic and add to the pan, you should also sprinkle over some salt and pepper for good measure
3. Slice the mushrooms into manageable pieces and add to the pan, then cook until soft
4. Add the chicken stock to the pan, followed by your sliced new potatoes (I like to cut mine into quarters)
6. Peel and press the remaining two garlic cloves and add to the pan with the potatoes
7. Leave to simmer until the potatoes are soft
8. While you wait for the potatoes to boil in the stock, boil up your savoy cabbage, this should usually take about two minutes
9. Once the potatoes are done, serve up your dinner, taking the chicken breasts out with a pair of tongs and then using a strainer spoon to scoop out the rest into a bowl or onto a plate
10. Pour the remaining stock over the rest of your food and then add the cabbage alongside it, now enjoy!
