Oreo Cheesecake | A Simple Recipe


Whether you're the ultimate Cheesecake lover, or just need a quick and easy dessert to bring to a family BBQ, this would be ideal. Personally, I'm not a massive fan of Cheesecake, but my family love it, and so do most of my friends, so I decided to make an effort and make it for them. It also means that I won't be partaking in the eating of it, which can only be a good thing for me!

This recipe is so simple, and doesn't require any baking, so it would be a great thing to help entertain the kids during the summer holidays. This recipe also means you can add pretty much anything you want to it. You can choose your own biscuit/cookie base if you wish, you can add anything you want to the cream cheese mixture, from broken biscuit pieces to a flavouring of your choice. You can also decorate it however you like.

However, this isn't something that will be ready in a matter of minutes, or even a few hours. If you need it for a particular occasion, I'd make it the day before to give everything time to set, there's nothing worse than a runny Cheesecake. Also, make the biscuit base a couple of hours before everything else, as it needs time to set before you dollop on the cream cheese mixture.

With all of that out of the way, I will finally tell you how you can make an Oreo Cheesecake.

Ingredients

*100g Oreos (or biscuits/cookies of your choice) Plus an extra packet.
*50g Demerara Sugar
*50g Melted Butter
*500g Full-Fat Cream Cheese
*100g Icing Sugar
*4 tsp Vanilla Extract
*200ml Double Cream (whipped)

1) Throw all of the cookies into a large resealable food bag, be sure to eject the air from the bag first, then seal the bag.

2) With a large rolling pin, and keeping the cookies in the bag, crush the biscuits as finely as possible.

3) Tip the contents out into a large mixing bowl, then add the sugar and butter and mix together with a wooden spoon.

4) Spoon the mixture into a circular tin, no bigger than 20cm. Ensure you line the tin with parchment paper before hand. Using a metal spoon, press the mixture down until it's flat and place in the fridge until it's fully set.

5) Using the same large mixing bowl, mix the cream cheese, icing sugar and vanilla extract together.

6) In a separate bowl, whisk the double cream until it stiffens. Then tip this into the cream cheese mix, take a wooden spoon and fold it in.

7) It's at this point where you take the remaining Oreos (and or the extra packet), and break in some biscuit chunks. It's up to you how many you use. Keep some back for the topping. Fold the pieces in well until they've spread evenly throughout the mixture.

8) Take the biscuit base out of the fridge, and spoon the mixture into the tin. Smooth it over with a spatula and decorate as you see fit. You can leave it plain if you'd prefer. I topped mine with six Oreo biscuits, and covered the rest with Oreo crumbs.

9) Put the tin back in the fridge and leave the set over night, or if you're doing this in the morning, leave it to set until the evening.

10) When it's firm, and clearly looks as though it's set well, take out of the fridge and serve cold. Ensure to cover the leftovers with foil or cling film and store in the fridge.
