A Recipe | Toad-in-the-Hole: Pigs in Blankets, Stuffing Balls & Pancetta-Sprinkled Brussels Sprouts (Perfect for Boxing Day Lunch)


This is the perfect recipe if you're looking for a way to use up any leftovers you might have after Christmas dinner. While my Toad-in-the-Hole only has pigs in blankets and stuffing balls on it, you can top it with everything and anything you want - that's the beauty of it. So for the simple recipe, here's everything I did to make a Boxing Day Toad-in-the-Hole that is basic, delicious and extremely warming for these cold nights and days.

Serves: 4

Prep time: 10-15 minutes

Cook time: approx 40 minutes

Ingredients

*3 tbsp cooking oil
*Yorkshire pudding mix
*12 pigs in blankets
*Sage and onion stuffing (rolled into balls)
*Brussels sprouts
*Pancetta 
*Beef gravy

Method (for the Toad-in-the-Hole)

1. Preheat the oven to 200C or gas mark 6
2. Pour 3 tbsp of oil into a roasting tin, making sure it's coated thoroughly
3. Put your stuffing balls and pigs in blankets into the tin and place it into the oven for 15 minutes
4. While that's cooking, mix up your Yorkshire pudding batter (for ease, I used the pre-mixed stuff) and then, once the 15 minutes is up, pour the mixture into the pan
5. Cook that for half an hour, until the mixture balloons and becomes fluffy and golden-brown
6. Once done, dish up and pour your gravy over the top

Method (for the brussels sprouts)

1. Take your sprouts and chop each one in half
2. Cook the pancetta in a pan until it becomes dark and crispy, with some juices flowing in the bottom of the saucepan
3. Once the pancetta has cooked through, tip the brussels into the pan and put the lid on the top
4. Cook these for 20 minutes until the veggies are soft and tender, with  bit of colour also, making sure to keep stirring well every few minutes
5. Once done, serve them up alongside your Toad-in-the-Hole
