How To | Make Rice Crispy Cakes
Random, I know, but, I thought it was really fun, quick and easy to make! Whether you are making them for your family, kids lunch boxes or even using it as an activity to do with the children during a rainy Saturday lunch time. Have fun, and enjoy some tasty treats :)
NOTE: This recipe is to make marshmallow rice crispy cakes, not chocolate ones, however, If you do wish to make chocolate ones, simply use melted chocolate instead of marshmallows.

Serves: 12
What You Will Need (Equipment)
Large Baking Tray
Butter/Greasing Brush OR Grease Proof Paper
Large Non Stick Sauce Pan
Large Wooden Spatula (so it doesn't scratch your non stick sauce pan)
What You Will Need (Ingredients)
Butter/Margarine (approx. 3 tablespoons)
Regular Marshmallows (approx. 40, buy 2 200g packs just to be sure)
6 Medium Sized Cups of Rice Crispies
STEP 1: Melt the Marshmallows
Time: 8-10 mins
Margarine/Butter Amount: 3 tablespoons
Equipment Needed: Large saucepan, large wooden spatula
-Firstly but the saucepan on the hob/stove on a medium heat, then add the 3 tablespoons of butter/margarine.
-Once the butter/margarine has melted, you can now gradually start to add the marshmallows.
-Make sure you keep stirring the mixture with a wooden spatula, if you don't do this, the marshmallows will stick to the edge of the pan, becoming difficult for you to clean it later on.
STEP 2: Pour in the Rice Crispies
Time: 5 mins
Rice Crispy Amount: 6 medium cups (or whatever you believe to be a sufficient amount)
Equipment Needed: Large Wooden Spatula
-Keeping the marshmallow mixture in the large saucepan, turn off the heat and begin to pour in your first cup of rice crispies (if you are not using cups to measure out, but instead just seeing what is going to be a sufficient amount, start by pouring in small bits at a time and mixing it in before putting in the next lot of rice crispies.
-Pour in one cup, then stir until the rice crispies are completely covered in the marshmallow mixture.
-Repeat the last step 5 more times.
STEP 3: Make the Squares
Time: 5-8 mins
Equipment Needed: Wooden spatula, large baking tray, greasing brush/grease proof paper
-Take your large baking tray and either grease it with margarine using the greasing brush, or simply cover it with grease proof paper.
-REMEMBER do not leave the mixture to sit for too long as it will harden really quickly.
-Now, take your wooden spatula (preferably a clean one) and grease that using a greasing brush OR you could smear the butter on to a piece of scrunched up kitchen towel and use that instead of a greasing brush.
-Begin to scoop up the mixture with your spatula or even a serving spoon and place a generous amount onto the baking tray.
-Using your wooden spatula, tap the mixture into a square, REMEMBER it doesn't have to be perfect, or even neat.
-Repeat the last step until all of your mixture has gone.
STEP 4: Waiting for the Squares to Set
Time: 10 mins / 5-7 mins if placed in a fridge or a cool place
-Place the baking tray to one side and leave to set.
-Alternately, you could place in the fridge, or a cool place where they will set quicker.
-To test if they have set, gently place the spatula on the top of the squares, press down lightly and then lift up, if the square sticks to your spatula, this means the mixture has not set, therefore the squares have not set, but if they do not stick to the spatula, they are ready to be served.
