Deliciously Festive Fruit Cake Recipe
Fruit cake is perfect for indulging in throughout the festive season. Not only do you feel less guilty for having eaten a slice, it also goes extremely well with a multitude of different beverages, from hot chocolates to mulled wines, there's not a lot this pudding won't go with. You could eat it either on it's own to accompany a cup of tea, or have a slice for dessert following a hearty meal. The choices are endless with a good old fashioned fruit cake. So let's make one shall we?

Cook Time: 1hr10mins
Serves: 12
Ingredients
*2 earl grey tea bags
*400ml boiled water
*1 orange
*250g mixed dried fruit
*250g fruit and nut mix
*3tsp. ground mixed spice
*4 large eggs
*4tbsp. skimmed milk
*300g self-raising flour
*0.5tsp. baking powder
Method
- Put the tea bags in a jug and pour the boiling water over them and then leave it to stew for around 5 minutes.
- Juice the orange and then pour the liquid into a large saucepan. Pour the tea in along with it and leave to stand for 1 minute.
- Add the mixed dried fruit and nuts, together with the spices and stir well.
- Put the pan over a medium heat, bringing it to a gentle simmer.
- Cook the contents gently until most of the liquid has been absorbed - stir occasionally.
- Remove the contents from the heat and tip the mixture into a large mixing bowl. Leave the contents to cool for around 40 minutes.
- Pre-heat the oven to 170C/150C (Fan)/Gas Mark 3.5.
- Line and grease a loaf tin ready for pouring the cake mixture in.
- Put the eggs and the milk into a separate mixing bowl (or Kitchen Aid etc) and mix.
- After this, add the flour and the baking powder and continue to mix.
- Pour this mixture over the (now cooled) fruit and stir again until fully combined.
- Pour the mixture into the cake tin you've lined and greased and place in the centre of the oven for 1 hour and 10 minutes.
- Once done, poke with a skewer from the top down to check it has cooked through.
- Remove the cake from the tin and leave to cool.
- Slice into 12 and serve with a tasty, festive hot beverage.
