A Recipe | Fresh Chicken & Chickpea Flatbreads
Choosing what to have for dinner everyday can become somewhat of a chore, especially when you find yourself regularly repeated meals because they're quick, easy and delicious. But what if I told you there was another dinner recipe you could try that'll blow the socks off of your dinner guests? Here's a dish that has become a bit of a 'go-to' meal for us - a fresh chicken and chickpea flatbread that has a bit of a kick to it!
Ingredients
*Flatbreads
*1 tin of chickpeas
*2tsp. of cumin
*Quarter tsp of cinnamon
*One fresh chilli
*Multi-purpose potatoes
*Lettuce
*Cucumber
*Chicken breast
*Dried mint
* Fat-free natural yoghurt
Method
1. Cut up your potatoes into the shape of wedge then toss in olive oil with some salt and pepper
2. Throw your wedges into a roasting tray and bake in the oven at around 220C
3. Take your chicken breasts and cut them into chunks then cook them in a frying pan, once cooked through, place to one side for use a little later on
4. Once the wedges look golden brown and appear soft and cooked-through, cook your chickpeas on the hob in a saucepan
5. Add the cumin, cinnamon and the sliced up fresh chilli then stir in thoroughly
6. Once cooked, take a potato masher and mash up the chickpea mix into a paste-like consistency
7. Take the chicken chunks you cooked earlier and stir those in also
8. Place the flatbreads in the voen to warm them through
9. While you're waiting, put some natural yoghurt into a bowl and throw in your dried mint, put to one side so diners can add yoghurt to their meal if they wish
10. Take the flatbreads and wedges out of the oven, placing the flatbread on one side of the plate and the wedges in a quarter of the plate
11. Slice up some lettuce and cucumber and fill the remaining quarter of the plate
12. Scoop the chickpea mix directly onto the flatbreads and serve accordingly
13. Be sure to put the bowl on the table with a serving spoon so as to ensure guests can have as much or as little yoghurt as they like
