A Recipe | Korean Beef

Korean Beef is something I fell in love with at Walt Disney World in Animal Kingdom. It was absolutely delicious. So when we got back home, I made it my mission to find a recipe that was as close as possible to the Korean Beef dish I had there, and I think I've found one. Let me share it with you so you can experience the joy of the dish as well!

Serves: 4
Prep Time: 40 mins
Cook Time: 5-8 mins

Ingredients

*500g stir fry beef strips
*1 red pepper
*1 yellow pepper
*1 carrot
*1 garlic clove
*A bunch of spring onions
*6tbsp dark soy sauce
*1tbsp sesame oil
*1tbsp rice wine
*2.5cm piece of root ginger (peeled and grated)
*2tbsp soft brown sugar
*2sp sesame seeds
*300g rice (of your choice, could be basmati, long grain, jasmine or sticky)

Method

  1. Put the soy sauce, rice wine, sesame oil, sliced garlic clove, grated ginger, brown sugar and sesame seeds into a bowl and combine well. Make sure the sugar has dissolved. Add the beef and toss it in the sauce.
  2. Leave the beef in the bowl to marinade for 30 minutes at room temperature
  3. Once the 30 mins is up, add the chopped spring onions and chopped peppers and slice the carrot into thin strips. Place those in the bowl as well and stir until the vegetables are well-covered
  4. Use a pan or a wok and heat it up on a medium-to-high heat. Spoon the mixture out of the bowl and place in the pan to avoid splashes and spitting
  5. Cook for 3-5 minutes, stirring occasionally to ensure even cooking
  6. Put the remaining sauce into the pan and heat up before turning off the heat
  7. Once warmed through, serve with rice of your choice
