Blogmas Day 8 | A Recipe: Festive Parkin

Welcome to Blogmas day 8! I'll be uploading festive content right here on my blog every day on the run-up the Christmas, so keep checking back right up until the 25th for some new, Christmassy blog posts. Today, I'm going to be telling you how you can make some gorgeous, sticky parkin this festive season. Let's get into it!

Prep time: 15 mins

Cook time: 1 hour

Serves: 16

Ingredients

*200g butter
*1 large egg
*4tbsp milk
*200g golden syrup
*85g treacle
*85g light soft brown sugar
*100g porridge oats
*250g self raising flour
*1tbsp ground ginger (that's right, a tablespoon!)

Method

1. Preheat the oven to 160C/140C fan/Gas mark 3 and then butter a 22cm deep square tin and line it with some grease-proof paper. Set aside for later

2. In a bowl, whisk the egg and milk together with a fork

3. Take a large saucepan and melt the golden syrup, sugar and butter together until the sugar dissolves and remove from the heat

4. Mix together the porridge oats, flour and ginger and then stir in the golden syrup mixture and pour in the egg and milk combo, too

5. Pour the entire mixture into the greased tin and bake for between 50 minutes-1 hour. The cake should feel firm and crusty on top. Leave it to cool in the tin before attempting to remove the cake from the tin. Once removed, keep it wrapped in baking paper and keep in a cake tin

6. Enjoy it with a Bailey's coffee, a hot chocolate, a glass of mulled wine or a simple cup of tea. It can be kept and eaten within two weeks
