A Madeira Cake Recipe
I've finally started doing some more foodey/baking posts, some of you will be happy to hear. The reason for this post being, that me and the boyf recently caught the baking bug, and so, having deduced that this would be a fairly simple and easy recipe to follow, we thought it would be a good one to put up on my blog! This would make a lovely homemade gift, given in a cute box or tin. You could bring it into the office for cake on Friday's or even a coffee morning (it does go very well with coffee by the way!).
So without further a do, lets begin :)
Prep Time: 20 minutes
Cook Time: 1 hour
Serves: 8+ (depending on portion sizes cut)
INGREDIENTS
*175g unsalted butter
*175g caster sugar
*1 tsp. vanilla extract
*200g self raising flour
*50g ground almond
*3 large eggs
METHOD
- Pre-heat the oven to 170C/150C Fan/Gas Mark 3.
- Line a 900g loaf tin with grease proof/parchment paper.
- Beat the butter and sugar together until light and fluffy.
- Add the eggs in one at a time with the tsp of vanilla extract.
-Add the flour and almonds and beat into a thick batter.
- If you find the batter is too thick, add some milk.
- Ensure the batter falls off your wooden spoon, this is how you know it's the right consistency.
- Pour the batter into the tin and round off with a silicon spatula.
- Bake on gas mark 3 for 55 minutes to an hour, or until the skewer comes out clean.
- Once done leave to cool in the tin for 15 minutes.
- Remove the cake from the tin and peel off the paper and place it on a wire rack.
- You can keep the loaf for up to three days.
