6 Tips for Using Up Leftover Food

In this day and age, it's never been more important to make the most of the food we buy. I'm always looking for new ways to reuse leftover food, whether it be chilli con carne or boiled pasta (yes, pasta). So here's what I do with any leftovers I have after a good, hearty evening meal. 

1. Use leftover pasta for lunch the next day

Boiled pasta is great for lunch the next day. I know it's already been cooked, but if you store it correctly and put the right ingredients with it, you'll be able to make a really healthy-yet-filling lunch, whilst still making sure you aren't wasting food and, in turn, money.

2. Use leftover mash potato to make fishcakes or for topping a cottage pie 

This all comes down to meal planning, a lot of the time. If on Monday you're planning sausage and mash, then make sure you have cottage pie on the Tuesday, because it will allow you to polish off any mash leftovers. You could even try your hand at some homemade fishcakes if you know you usually make too much mash potato. It's a great way of bulking out other dishes, so don't rule anything out.

3. Use stale bread as croutons in soup

Stale bread, especially crusty rolls, go wonderfully in a bowl of soup. It might sound a bit odd, but they act as, almost, fresh bread croutons. It doesn't really matter what flavour of soup you have or whether the bread is white or wholemeal, it's a great way of using leftover bread that doesn't include giving it to ducks or birds, because you shouldn't do that, haha.

4. Use up stale cake with ice cream & sauce

Cake might not be everyone's go-to, especially after an evening meal. But what you could do, even if it's just one slice of stale sponge, is to break it up over a nice bowl of delicious ice cream, topped off with chocolate or caramel sauce. It's almost like a homemade sundae, but without any wastage! If you can't eat it all yourself, share it with someone else :)

5. Put limp salad leaves in homemade quiches 

Making a quiche from scratch is really easy to do, especially if you buy pre-made pastry. If you have any limp or wet salad leaves leftover, whether it be spinach or rocket, throw it into a homemade quiche mix. It's so quick and simple, it would be almost silly not to use your limp salad leaves in this way.

6. Use eggs to make a frittata

Lets say you've baked a cake and you have some eggs to use up but you don't really eat them, why not make a healthy frittata for everyone as an evening meal? You'll be able to make it more substantial by adding new potatoes and some Mediterranean veg. It's both filling and healthy!
