A Recipe | Homemade Ratatouille
I was looking for a quick, healthy meal to eat mid-week that was also delicious, and this was something that I came across. I love Mediterranean vegetables, so it's right up my street. This is such an easy dish to make, you don't even need to have any cooking skills really. Despite being mostly veg, it's actually really filling and nutritious, so what's there not to love? Let me tell you how to make it yourself!
Ingredients
The following ingredients are enough to make two portions:
*1 courgette
*1 aubergine
*A handful of cherry tomatoes
* Several basil leaves
* 1 red pepper
*1 yellow pepper
*3 garlic cloves
*1 onion (red or white, it's up to you)
*3 tbsp olive oil
*1tbsp red wine vinegar
Method
- Chop up your aubergine into chunks, together with your courgette.
- You could peel your peppers, but I choose not to. If you want to, then do this now and then chop into bite-sized chunks
- Half the cherry tomatoes. You could scrape out the flesh inside, if you don't want the seeds in your dish, but I don't bother
- Tip all of the veg into a pan and saute until the flesh of the veg starts to brown. Make sure to sautee with 2 tbsp of olive oil
- Once the veg has gained some colour and has softened, tear up the basil leaves and throw those in
- After this, cut up your garlic cloves, or crush them, and add those to the pan as well
- Stir in 1 tbsp of red wine vinegar
- Wait for the veg to regain some heat after throwing in the vinegar
- Tip the contents out into a bowl and serve with rice or boiled potatoes, if you're looking for a healthy accompaniment
- To finish, drizzle over 1 tbsp of olive oil and put a few sprigs of basil on top for good measure
