A Halloumi Lover's Dream


I LOVE Halloumi! So when I find a new dish that involves Halloumi, I will go out of my way to recreate that same dish at home. This sandwich is super simple and quick to make, not to mention it's pretty low in calories and fat but it's also very tasty. Let me show you how I made mine :)

YOU WILL NEED...


*An air tight packet of low fat Halloumi
*Red Pepper
*Spinach
*Low fat hummous (you can choose a flavoured one if you prefer)
*A crusty white roll (or you could opt for a brown or multi-seed roll)

LET'S DO THIS

Step 1: Cut the Halloumi into slabs & stick under the grill

Take the Halloumi out of the packet and cut it up (like in the previous photo), you should have 4/5 slabs of cheese when you're finished. Now, the common mistake made with Halloumi is that people tend to fry it in a pan. Don't that for this dish. You need to grill the Halloumi. I won't tell you how far to cook it, you can take it off the grill whenever you like, I just like my Halloumi cooked very well.


Step 2: Slice & grill pepper

You need to slice the pepper into the same sort of shape as the Halloumi. Don't slice it into sticks because they'll be more likely to fall out of your sandwich. Place them under the grill, and leave to cook for a short while. You'll know when they're ready because the skin will begin to wrinkle.


Step 3: Prep the crusty roll & heap on the Hummous

Cut it in half, but don't put butter in this roll, it won't taste nice. Take a tea spoon of Hummous and scrape one blob on one half of the bread and another blob on the other half, then with a knife, gently spread the Hummous to cover all the corners. Don't spread it too thinly either. You need to have a thick layer of Hummous on at least one side.


Step 4: Add the rest of the ingredients to the inside of the roll

First add the Halloumi slabs (as many as you want), then add a small handful of Spinach leaves followed by the Red Pepper. You can add more Hummous in between the ingredients if you want to!


Step 5: Serve and enjoy

Now it's time to sit outside in the sunshine, with some headphones in, sunglasses on, a glass of home made lemonade, and tuck in to this tasty sandwich. Enjoy guys!
