Making 'Low Fat' Brownies!
Like most people, I LOVE a good brownie, but they're very naughty, so I decided to make some which were lower in fat but were still super tasty and very chocolatey! So I'm going to show you how to make them at home :)
Prep Time: 10-15 mins
Cook Time: 30-35 mins
Serves: 12
INGREDIENTS
*85g dark chocolate (70% cocoa)
*85g plain flour
*25g cocoa powder
*1/4 tsp. bicarbonate of soda
*100g golden caster sugar
*50g light muscovado sugar
*1/2 tsp. coffee granules
*1 tsp. vanilla extract
*2 tbsp. buttermilk
*1 egg
*100g low fat mayonnaise
METHOD
Step 1: Pre-heat the oven, melt the chocolate & mix the dry ingredients together
Pre-heat the oven to gas mark 4/180C/Fan 160C.
Next, fill up a third of a small pan with water, and bring it to the boil. When it starts bubbling, place a microwavable/oven safe bowl over the top of it, and put the chocolate chunks in the bowl. Leave the chocolate in the bowl until it starts to melt, then stir every so often with a wooden spoon until the chocolate runs smoothly.
Meanwhile, tip in the flour, cocoa powder and the bicarbonate of soda into a seperate bowl and mix them together, don't worry about seiving anything yet, that step comes later.
Step 2: Take the chocolate off the heat & stir the rest of the ingredients into the melted chocolate
Take the chocolate off the heat, and leave it to cool slightly. While the chocolate is still warm, tip in both sugars, coffee, vanilla extract and the buttermilk and stir together with a wooden spoon. Then add a tbsp. of warm water.
Add the egg, and the mayo, keep stirring until the consistency turns gooey.
Step 3: Sift in the dry ingredients & fold
Take the dry ingredients and sift them into the gooey chocolate mix. Then, take a spatula, and fold it all in. It's really important you fold, don't mix or beat it all in because your brownies won't be thick and fluffy.
Step 4: Prep a baking tray & place in the oven
Take a rectangual cake tin, make sure you either grease the tray with vegetable oil or simply line it with greaseproof/parchment paper. Then pour the mix into the tin, and with aa spatula, smooth it out to the edges of the tin. You don't have to smooth it over, I didn't, it really makes the 'homemade bakes' look more authentic.
Making sure you don't change the pre-heated temperature on the oven, pop the tray on the middle shelf and bake for 30-35minutes.
Step 5: Take the tray out, leave to cool & enjoy
Take the tray out, and leave the brownies to cool in the tin. When it's all cooled, take the cake out and cut into sqaures, they're now ready to be served and ready to munch on with a cuppa in hand :)
