Four Cheese Tuna Pasta Bake

I love a good tuna pasta bake! More specifically the ones Tesco sell (admittedly). But while I think Tesco's tuna pasta bakes are pretty delicious, it just isn't the same as a good old fashioned homemade one. I wanted to post this on my blog because I thought it was a pretty simple thing to make. It's great for family dinners and makes for great leftovers ;)

Let me show you how I made it!

WHAT YOU WILL NEED

*600g Rigatoni
*50g butter
*50g plain flour
*3x160g cans of tuna
*250g strong mature cheddar
*330g sweetcorn
*5 heaped tbsp. low fat mascarpone
*2 tbsp. parmesan
*2 packets of low fat buffalo mozzarella
*2 cans of chopped tomatoes
*handful of chopped parsley
*sprinkling of pepper (optional)
*600ml milk

Preheat the oven on gas mark 4/180C/fan 160C


METHOD

Step 1: Boil the pasta & make the sauce

Boil all the pasta you have on a steady, simmering heat. Boil it for 2 minutes less than is stated on the packet.


To make the sauce, melt the butter in a large saucepan. Once it has fully melted, pour in the flour and stir.


Keep it cooking for 1 minute or until the mixture thickens.


Gradually pour in the milk, ensure you mix it in well in-between pouring. When you've poured in all the milk, take the pan off the heat and throw in all your grated cheddar cheese. Mix it all in, but don't leave the mixture standing for any longer than 20 seconds, or your mixture could turn lumpy.

Step 2: add the tuna, sweetcorn, parsley and pepper & drain the pasta

Drain the pasta. While it's draining, tip the tuna and sweetcorn into the sauce and stir these in. Then, sprinkle some pepper on top and the chopped parsley. Ensure you stir these in as well.


Step 3: Pour the sauce & tip the pasta out into a large rectangular dish (oven safe)

Pour half of the sauce into the dish, then add half od the pasta. Mix the two together well. You now need to slice the buffalo mozzarella into chunks and throw those in. Mix them in with a tin of chopped tomatoes. Repeat this step until your dish is full.


Step 4: Add the finishing touches

Once your dish is full, open a new can of chopped tomatoes and with a tablespoon, dollop them throughout the top of the mixture. You then need to add the five tbsps. of mascarpone, scoop them on top like you did with the chopped tomatoes. Sprinkle some more pepper and two tbsp. of parmesan cheese. Add some more sprigs of fresh parsley and pop in the oven.


Step 5: Serve and enjoy
