Blogmas (Day 1) | A Super Simple Gingerbread Man Recipe


It's that time of year again and today marks the start of 'Blogmas'. For the next 24 days, including Christmas Day, I will be publishing a festive post, so keep checking back for a festive treat.

I thought we'd start off with something simple, easy and delicious to start the festive season. Baking is the ultimate Christmassy thing to do. Whack on that variety Christmas CD that comes out every year, grab some friends or members of your family, have a cup of rich, hot chocolate and get your oven on. Be prepared to get messy for this fun, yummy activity.


Prep Time: 30 mins-1hr
Cook Time: 10-20 mins
Serves: 20

Ingredients

*350g Plain Flour
*1tsp. Bicarbonate of Soda
*1tsp. Ground Cinnamon
*1tsp. Ground Ginger
*125g Butter
*175g Brown Sugar
*1 Egg
*4 tbsp. Golden Syrup

*Hundreds & Thousands
*Sugar Confetti

Method

1) Sift the flour, bicarbonate of soda, cinnamon and ginger into a large bowl (preferably a food processor, if not, a normal mixer should be fine. Likewise if you mixed it by hand). Give it a quick mix.

2) Add the butter and blend until the mixture resembles that of breadcrumbs. Once this is the case, stir in the sugar.

3) Beat in the egg and golden syrup gently, eventually, the mixture should clump together.

4) Once it turns into dough, tip it out onto a clean surface and knead briefly until the dough runs smooth. Roll the dough into a big ball and wrap it in cling film, place in the fridge like this for roughly 10-15 mins.

5) While the dough is in the fridge, preheat your oven at this point to 160C Fan/180C/Gas Mark 4. Line two baking trays with grease proof/parchment paper.

6) When the 10/15 mins is up, take the dough out of the fridge and roll it (on a lightly floured surface) out to a thickness of half a cm. Cut the gingerbread men out and carefully place them on the trays.

7) Place in the oven for 10-20 mins, or until golden brown.

8) Once they're done, leave to cool on the tray for 10 mins before transferring to a cooling rack. You can decorate your gingerbread men (if you so wish) when the biscuits are completely cool.

9) Let the icing set and transfer to a festive tray or plate.
