A Recipe | Sweet & Sour Chicken Perfect for Mid-Week


Sweet and sour chicken is an staple, go-to, mid-week meal for us. It's tasty and it hits of takeaway vibes even on a Wednesday night. It's so simple and quick to make and you can choose all of the sides you want to go with it. But how can you make it and enjoy it yourself in the comfort of your own home? Let me tell you!

Serves: 4

Prep Time: 10 mins

Cook Time: 20-30 mins

Ingredients

*Half a small pineapple
*Onions (cut into wedges)
*1 red pepper
*1 green pepper
*4 chicken breasts
*1tbsp cornflour
*300ml pineapple juice
*x2 galric cloves
*1tbsp dark soy sauce
*2tbsp white wine vinegar
*2tbsp soft light brown sugar
*3tbsp tomato ketchup
*25g root ginger
*x2 packets of microwave egg fried rice
*x1 packet prawn crackers

Method

1. We're going to make the sauce first. So take the cornflour and put it in a small bowl. stir in 2tbsp pineapple juice until it begins to thicken and run smooth. 
2. Put the remaining pineapple juice in a different bowl. Stir the garlic, soy sauce, ginger, vinegar, sugar and ketchup into the pineapple juice and stir thoroughly until combined. Set this aside for later.
3. Take the small pineapple, chop it in half and remove the skin. Quarter it length ways and remove the internal core. Cut the pineapple into thick slices and then set aside. 
4. Now it's time to cut the chicken breasts. Slice each breast into between 7-9 pieces. Chop all of your vegetables and then take a frying pan and put some oil in the bottom. Once hot, put the vegetables in the pan first and allow them to brown and soften. Coat the chicken in the cornflour and add this to the pan also. Stir for around 4 minutes, or until the chicken has become golden in colour on all sides.
5. Stir the cornflour/pineapple mixture into the pan and cook for another 2-3 minutes. Allow the sauce the thicken and become glossy. 
6. Once cooked, serve with egg fried rice and a side of prawn crackers for the ultimate at-home fakeaway.
