Avocado Five Ways


I love an avocado as much as the next person. So I thought, why not combine five, quick and easy recipes that you can do at home, with the ever so popular Avo! They're tasty, creamy and healthy, but not a whole lot of fun on their own (although I sometimes do like them on their own on the odd occasion). Hopefully, these five recipes make a plain avocado a bit easier to swallow! I hope you enjoy them :)

Crispy Cheesy Baked Avocados




Prep Time: 15 mins
Cook Time: 15 mins
Serves: 4

Ingredients

*2 large avocados
*75g sun-dried tomatoes
*4 baby plum tomatoes
*50g pine nuts
*2 tsp. green pesto
*4 tbsp. breadcrumbs 
*4 tbsp. grated parmesan
*Handful of parsley (chopped)
*Handful of rocket
*Olive oil for dressing
*Sprinkle of rock salt
*Sprinkle of black pepper

Method

1) Preheat the oven to 400F/200C/Gas Mark 6
2) Cut the avocados in half (length ways) and discard the stone.
3) Scoop out some of the flush with a teaspoon and place in a bowl with the sun-dried tomatoes, plum tomatoes, pine nuts, parsley, 2 tbsp. of parmesan and pesto.
4) Mix the contents in the bowl until well combined, then scoop some into the hollowed out avocado halves, then place them in an oven dish (with high sides so the halves don't fall over).
5) Drizzle with olive oil and sprinkle the parmesan, breadcrumbs, salt and pepper on top.
6) Bake for 15 mins until golden brown.
7) Serve hot with a little rocket.

Toasted Mushroom and Avocado Light Bite

Prep Time: 10 mins
Cook Time: 5 mins
Serves: 4

Ingredients

*400g chestnut mushrooms
*4 tbsp. green pesto
*4 tbsp. cream cheese
*4 thick slices of sourdough
*2 garlic cloves (cut in half)
*2 avocados
*Sprinkle of rock salt
*Sprinkle of black pepper
*Basil leaves (whole)

Method

1) Heat a frying pan over a medium-high heat with some olive oil, once hot, add the mushrooms and stir until soft.
2) Once they've cooked, turn the heat down and leave the mushrooms to cook a little longer.
3) After a minute or so, add the pesto and the cream cheese, season it with salt and pepper and stir.
4) Whilst that's simmering, toast the bread, when it's golden brown, take the slices and rub a garlic clove across one side and drizzle with olive oil.
5) Halve the avocados length ways and retrieve the stones, scoop the avocado flesh out using a table spoon and slice thinly.
6) Put the toast out onto plates and place an even amount of avocado slices on the pieces of toast and spread them out a little.
7) Give the mushrooms one more stir with the cream cheese and pesto mixture and scoop some out onto each of the pieces of toast.
8) Pop a few basil leaves on top and serve.

Roasted Cherry Tomatoes & Avocado on Toast


Prep Time: 5 mins
Cook Time: 1hr
Serves: 4

Ingredients

*300g cherry tomatoes
*2 avocados
*4 thick slices of sourdough bread
*Sprinkle of rock salt
*Sprinkle of black pepper
*Handful of chives (snipped)
*2 tsp. balsamic vinegar (for serving)
*2 tbsp. lemon juice

Method

1) Preheat the oven to 325F/170C/Gas Mark 3.
2) Place the cherry tomatoes (still on the vines) on a baking tray, drizzle with olive oil, rock salt and black pepper, pop in the oven for an hour.
3) Cut the avocados in half length ways, discard the stones and scoop out the flesh using a table spoon then put them in a bowl.
4) Take a fork and mash it finely, add a few drops of lemon juice and a tiny amount of rock salt.
5) Toast the bread and once done, spread one side with avocado.
6) Take the tomatoes out of the oven and place them (still on the vines) on top of the bread, then drizzle with balsamic and throw on some chopped chives then serve.

Scrambled Eggs & Avocado Breakie

Prep Time: 5 mins
Cook Time: 4/5 mins
Serves: 4



Ingredients

* 6 medium eggs
*2 tbsp. milk
*2 avocados
*150g creamy goats cheese
*4 thick slices of wholemeal bread
*2 tbsp. butter (plus extra for spreading)
*Sprinkle of rock salt
*Sprinkle of black pepper
*Sprinkle of chilli flakes
*2 tbsp. lime juice
*Handful of parsley (chopped)

Method

1) Beat the eggs and milk in a bowl and toss in some light seasoning of salt and pepper.
2) Cut the avocados in half, discard the stones and scoop out the flesh using a table spoon.
3) Mash in a separate bowl with the lime juice, once its all finely mashed, stir in the herbs and goats cheese and lightly season with salt and pepper.
4) Toast the bread till golden brown and butter it lightly.
5) Scoop the cheese and avocado mixture on top and spread evenly across the toast.
6) Melt the remaining butter in a pan and put over a medium heat, once the butter melts then pour in the egg and milk mixture, stir with a wooden spoon or silicon spatula until they scramble together, once this happens, remove from the heat ASAP.
7) Distribute the scrambled eggs evenly across the four pieces of toast and dust with chilli flakes and serve hot.

Smokey Paprika Brunch

Prep Time: 10 mins
Cook Time: 4/6 mins
Serves: 4



Ingredients

* 12 rashers of thin-cut streaky bacon
*4 medium eggs
*4-6 tbsp. milk
*4 thick slices of multigrain bread
*2 tsp. olive oil
*2 tbsp. unsalted butter
*2 avocados
*2 tbsp. lemon juice
*2 tsp. smoked paprika
*Sprinkle of rock salt
*Sprinkle of black pepper
*Maple syrup (optional)

Method

1) Grill the bacon (or fry using a non-stick pan) until golden and crispy around the edges.
2) Beat the eggs and milk in a bowl, season with salt and pepper and dip the bread in the mixture, ensure the bread is coated in egg and milk mixture, leave the bread to soak 2/3 minutes.
3) Heat the olive oil and butter in a pan and over medium heat.
4) Once hot, add the slices of bread and cook for 2/3 minutes on both sides, or until golden brown.
5) Once cooked, remove carefully.
6) Halve the avocados length ways and discard the stone, scoop out the flesh carefully using a table spoon, then chop it into cubes, sprinkle with lemon juice and season slightly with salt and pepper.
7) Serve the French toast on a plate, put the avocado on top of the toast, together with the bacon and dust lightly with smoked paprika.
8) Serve while the toast (and bacon, if you can) is still hot, you could put some maple syrup along side it, either drizzle it over the top, or serve it in a small jug.
