How To | Creamy Avocado Pasta


I love avocado, I could eat it with anything, so when I was told I could make a sauce out of it, I didn't hesitate to give it a go, so I thought I would show you guys as well :)

NOTE: you will need a food processor for this, or even a smoothie blender, some kind of electronic blending device.

Preparation Time: 5 minutes
Time to Cook: 10 minutes
Serves: 3

INGREDIENTS
225G pasta (whatever shape you wish)
1-2 cloves of garlic
2 tbsps. of lemon juice
1 tbsp of extra-virgin olive oil
1 ripe avocado
Salt and Pepper
Lemon zest (optional)
Chicken Breast (optional)
Cherry tomatoes, halved (optional)


STEP 1: COOK THE PASTA

Boil a large amount of water in a kettle. and pour it out into a saucepan, pop the pasta in the water and turn the gas on, but don't put it on too high, just let simmer lightly. Sprinkle some salt and a tiny bit of olive oil in the water to give the pasta some taste.


STEP 2: PROCESS THE REMAINING INGREDIENTS

Cut up the garlic cloves, and scrape them into the processor, the cut open the avocado, remove the stone and with a spoon, scoop out the flesh, you don't need to cut this as its already very soft so just put both halves in the processor with the garlic. Then add the lemon juice and the extra virgin olive oil, you may want to add a tbsp. of water as well so the sauce doesn't come out too thick.

Start blending the ingredients together. Some of the mixture will go up the sides of the bowl, so every so often, turn off the blender and scrape the stray sauce back into the middle of the bowl and blend again.

When you're satisfied its been smoothly blended together, give it a stir around with a spoon and make sure there aren't any chunks of garlic clove etc. still present.


STEP 3: COOK EVERYTHING ELSE
If you decided to cook some chicken like I did, its best to cook that now while the pasta is still coming to the boil. If you chose to add anything else which needs cooking now would be the time to do it. Don't had any tomatoes etc now, wait until the end.
STEP 4: DRAIN THE PASTA AND GET MIXING
Once the pasta looks ready, drain it using a colander, don't wait for it to cool down too much either, just leave it long enough to drain the water. Then scoop the pasta into some bowls, get a serving spoon and start putting some sauce on top, then with the same spoon mix up the sauce and the pasta until everything is covered. Now is also the time to add your chick and or tomatoes (if you decided to add anything else), then if you have any sauce left, put a little bit more on each dish and stir again.
STEP 5: ENJOY!
Now there's nothing left to do but eat :)
