A Meat-Free, Mid-Week Curry Everyone Will Enjoy

It's been quite a while since I last did a savoury recipe here on my blog. Seeing as this is one of my all time favourite dishes to cook, mainly because it's so quick, tasty and filling, I thought I'd share it with all of you. You might not be a curry type of person, but not only is this meat-free it's also quite tomato-ey as opposed to creamy. You can also choose a ready-made jar of curry sauce to suit your taste buds, so if you don't like it spicy, go for a milder option, like a balti. Anyway, let's get into how you make this simple, super-fast meal and all without any meat in sight.

Prep time: 10 mins

Cook time: 15 mins

Serves: 3-4

Ingredients

*300g basmati rice
*1-2 brown onions
*400g of chickpeas
*A tomato-ey jar of ready-made curry sauce, such as bhuna or balti 
*1 green pepper
*1 red pepper
*1 tsp cumin
*2 cloves garlic

Method

Step one: put the kettle on the boil and start chopping your vegetables. Quarter your onions and cut your peppers into thin strips. Leave the chickpeas in the tin for now as you don't need them yet but you could open the tin for ease later down the line.

Step two: get the rice on the boil, stir and then leave to simmer until soft. Add some oil to a pan and heat evenly. Throw in your onions and peppers with a teaspoon of cumin and two cloves of crushed garlic. Brown the vegetables and wait for them to soften before adding the sauce.

Step three: add the chickpeas to the mix and allow toss them in the pan for around 2-3 minutes. It's at this point that you want to tip the jar of sauce in. Combine it all thoroughly, ensuring every peace of veg has been coated. Leave in the pan to simmer whilst the rice finishes cooking.

Step four: test the rice. If it's cooked, drain it off using a sieve, stir the curry mixture one last time and then serve. Grab some poppadoms, naan bread and even a few onion bhajis for good measure and enjoy. This goes particularly well with a number of lagers, including Cobra, Kingfisher and Corona (alcohol should be enjoyed by anyone over the age of 18 in the UK. Please drink responsibly).
