Avocado, Chickpea & Mint Yoghurt | A Quick Chopped Salad We All Have Time to Make

Everyone loves a salad, but not a boring one. Whenever I have one, it usually has something a little extra in it. If I don't go for a dressing, I'll chop some avocado into it for a change of texture and a less sharp taste, but I decided to go the whole hog with this one, mainly because I wanted to try my hand at doing some homemade mint yoghurt and it actually worked exceptionally well. So well, in fact, that I decided to write a blog post about it. It's super quick, cheap and easy to make. So let's get into how you can go about whisking up a dish of your own :)

Ingredients

*Ice gem lettuce
*x1 beef tomato
*Cucumber
*Fresh mint leaves
*Chickpeas
*0% fat natural yoghurt
*Avocado

Method

For the salad (make sure you wash all veg before eating)...

Step one: Chop up your lettuce and lay it in the bowl, then cut up a few slices of cucumber and half of your beef tomato

Step two: Prepare your avocado and slice it into chunks, then toss those chunks in with the rest of your salad. Then drain your tin of chickpeas and sprinkle them over the top.

Step three: Put a dollop of your mint yoghurt on top of your salad mound and then garnish with a few leaves of fresh mint.

For the mint yoghurt...

Step one: Chop up some fresh mint leaves and then cut up some cucumber into small chunks

Step two: Put the cucumber and mint leaves into a bowl and then stir the natural yoghurt in

Step three: Add a few drops of lemon juice or lemon zest to the yoghurt mix together with a splash of white vinegar

Step four: Your yoghurt is now ready to dress your salad. If you have any left over, be sure to eat with falafel or use as a homemade dip for carrot sticks, celery or even crisps
