4 Meat-Free Meals I Love, Despite NOT Being Vegetarian
I may not be a vegetarian, but that doesn't mean to say that I don't enjoy veggies dishes. They're healthy, tasty and filling. There's nothing like a chickpea curry or a ratatouille lasagne to both warm you through and give you all of the nutrition you need, only without the addition of meat. So without waiting any longer, here are four meals I love to make when I'm looking to go meat-free:
1. Vegetable fajitas
Veggie fajitas are both easy to make a have a delicious flavour that packs a punch. I like to add chickpeas, red peppers, onions and mushrooms to my vegetable fajita mix, along with a seasoning of chipotle powder and a sprinkling of paprika for good measure. It's so quick and simple to make.
By the time you're done, all you have to do is spoon the mixture out into a tortilla, roll it up and serve it for dinner. 2. Chickpea balti
Chickpeas are an amazing source of protein, meaning you don't have to rely on chicken to meet those protein needs. I like to keep things simple when it comes to vegetarian curry. I'll only include chickpeas and large onion slices that are nicely charred around the edges, with either red or green pepper thrown into the mix.
I find that this is more than enough when it comes to packing out the mixture and getting the nutrition you need, despite the curry being meatless. 3. Ratatouille lasagne
Ratatouille lasagne is a veggie take on the beefy classic. Ratatouille, in general, is a really delicious, healthy mix that can be enjoyed either on its own with rice and potatoes or, when mixed with passata or another tomato-ey cooking sauce, you can throw it in between the layers of lasagne sheets.

4. Classic ratatouille
I've just touched briefly on how amazing classic ratatouille is, but it really is an amazingly tasty dish that can be enjoyed by everyone, even if you aren't vegetarian. I like to pair this with brown rice or some boiled new potatoes as it isn't quite as filling as it should be without some sort of carby accompaniment.
