A Recipe | Slow Cooker Chicken & Tomato Jambalaya with Chorizo

I have been loving using our slow cooker recently. Any excuse to throw some food in there and leave it on all day ready to dish up when we're ready. It's extremely convenient and absolutely delicious, no matter what it is you're cooking up in there. Excuse the header photo by the way - I actually forgot to take a picture of the finished product which, obviously, had rice in it!

Ours is a multi-cooker, so we can sautee, roast, fry, bake and slow cook food in here. It really is a fantastic little appliance. We got ours from John Lewis and it's a Crock Pot model with a digital display. I'll leave a photo of it below for you, including a link to where you can buy your own, if you're interested :)

Chicken jambalaya is one of my favourite dishes. It's tasty, warming and incredibly filling so I thought I'd share the recipe with you all so you can give it a go yourself in your own slow cooker. You don't actually need an all-singing, all-dancing multi-cooker for this one!

Prep time: 10 minutes

Cook time: 45 minutes to an hour

Serves: 4

Ingredients

*1 tbsp olive oil
*2 chicken breasts
*1 onion (chopped)
*1 red pepper (diced)
*100g chorizo (half diced, half sliced)
*1 tbsp cajun seasoning
*250g long grain rice
*400g chopped tomatoes
*350ml of chicken stock

Method

Step one: add the olive oil to a pan, dice the chicken breasts and cook until they're golden brown
Step two: once cooked, remove the chicken from the pan and set to one side
Step three: dice the onion and soften for 3-4 minutes
Step four: slice and dice the red pepper and add those to the pan with the onions
Step five: slice 50g of chorizo and dice the remaining 50g to add texture to the dish then add these to the pan and continue to cook
Step six: add the cajun seasoning and conitnue cooking for a further 5 minutes
Step seven: tip in the chicken chunks, chopped tomatoes and all of the long grain rice and stir
Step eight: pour this mixture into your slow cooker and set to a high heat
Step nine: once in the slow cooker, pour the chicken stock in and stir again
Step ten: place the lid on and leave to cook for 45 minutes to an hour or until the rice has cooked then serve and enjoy
