A Recipe | Dundee Cake

Cook time: 1 hour 45 mins
Serves: 16

Ingredients

*100g blanched almonds
*225g plain flour
*180g salted butter
*180g light muscovado sugar
*1 tsp baking powder
*100g ground almonds
*500g mixed fruit
*2 tbsp milk
*3 large eggs
*1 large orange (zest of)
*3 tbsp marmalade/apricot jam

Method

1. Preheat your oven to 180C/160C fan/gas mark 4, then take a 20cm cake tin and grease it

2. Place the butter in a bowl and stir/beat until light and fluffy. Then tip in the sugar and stir in the marmalade or apricot jam

3. Sieve the flour and the baking powder together and add the eggs to the butter and sugar mix that you've just whipped up. Add some more flour if it starts to curdle 

4. Add the ground almonds and then stir well. Once this is done, add the milk and tip in the mixed dried fruit. Combine it together until it's evenly distributed

5. Scoop the mixture into the cake tin and level off to form a smooth surface with a spoon

6. Once flat, arrange the blanched almonds into the typical pattern needed for a Dundee cake

7. Bake in the oven at the temperature you've set it at for 45 minutes

8. After 45 minutes, lower the oven temperature to 160C/140C fan/gas mark 3 and cook for a further 60-80 minutes, or until cooked through

9. After baking, you can make a glaze to go over the top, using a simple mixture of milk and sugar

10. Put the mixture onto a spoon and allow to drip all over the cake, covering it well. It's now ready for you to slice, but it's best eaten when a few days old
