Pear & Toffee Muffins


I'm always on the lookout for a new cupcake/muffin recipe, or just anything to spice up normal, easy, everyday baking. These weren't the easiest cakes in the world to bake, but if you have a lot of time and patience, then you could really enjoy making these! They're also incredibly tasty, so whether you're baking them or eating them, one thing is for sure, you'll love them :)

Prep Time: 15-20 Minutes
Cook Time: 30-35 Minutes
Serves: 12
Calories Per Muffin: 250

(These muffins can be reheated after they've cooled)
These can be enjoyed hot or cold!

Ingredients...

*300g self raising flour
*1 tsp baking powder
*85g golden caster sugar
*2 tsp ground cinnamon/3 cinnamon sticks
*250ml milk
*2 eggs
*100g unsalted butter
*2 ripe pears
*100g soft toffee
*25g flaked almonds


Method...

1) Pre-heat the oven to 200C/180C Fan/Gas Mark 6, and line a muffin tray with muffin cases.

2) Tip the flour and baking powder into a large bowl and mix them together.

3) If you're using ground cinnamon, tip it in as well and mix, if you're using sticks, add throw them in and mix with a wooden spoon, do not use an electric whisk or a processor to do this. If you've used sticks, remove them from the mix but only after stirring for 1.5-2 minutes.

4) Stir in the sugar at this point.

5) Melt the butter in a pan, and then pour it into a large jug with the milk and eggs. With a fork, beat it together and pour the mixture in with the dry ingredients and fold the mixture together with a spatula.

6) Add the pear squares and a third of the toffee pieces. You could melt them in the microwave and pour it in, but it hardens very quickly so you'll have to be quick!

7) Still using a spatula, combine the pear and toffee, there should still be streaks of flour in the mixture and it should still be slightly lumpy.

8) Using a serving spoon, scoop the mixture into muffin cases, put the remaining toffee on the top of each muffin and then sprinkle some flaked almonds on top.

9) Place in the oven and bake for 30-35 minutes. Do not adjust the temperature you pre-heated the oven at.

10) When the muffins are golden and risen, take them out of the oven and allow to cool in the tin, do not touch the toffee on the top of the muffins as it will be super hot!

11) Serve, and enjoy :)
