A Simple, Gooey Mini Egg Brownie Recipe That'll Leave Everyone Wanting More

Easter is the perfect time to indulge slightly when it comes to all things chocolatey and every year, I always try and do a festive bake with good old fashioned Cadbury Mini Eggs. A few years ago, I wrote a blog post all about how to make chocolate Easter nests using this small, crunchy balls of chocolatey goodness and you can read that here if you're at all interested. But this year, I thought I'd do something a little different and make Cadbury Mini Egg brownies. They're super simple to make and they're absolutely delicious :)

Prep time: 25/30 mins

Cook time: 30 mins

Serves: 9-12

Ingredients

*185g butter (unsalted)
*185g dark chocolate (or milk chocolate if preferred)
*275g brown sugar
*85g plain flour
*40g cocoa powder
*3 large eggs
*4 Cadbury Creme Eggs
*150g Cadbury Mini Eggs

Method

Step one: put the chocolate and butter in a bowl and melt until smooth and creamy. This can be done either in the microwave or by heating the combination in a glass bowl over a pan of boiling water.

Step two: once the chocolate has melted, pre-heat the oven to gas mark 4/180C/160 fan and line and grease a rectangular baking tray. Baking or grease-proof paper would be better in this case over tin foil.

Step three: take a different, clean bowl and break in the eggs and add the sugar. Beat the two together until it all goes thick and creamy, almost doubling in size.

Step four: once the chocolate mixture has cooled, add it too the bowl of eggs and sugar and fold together, gently, using a spatula.

Step five: sieve in the flour and the cocoa powder and continue to gently fold the mixture until it's adequately combined.

Step six: pour the entire mixture into the tray and level it all out and smooth it over with your spatula then bake in the oven for 20 minutes.

Step seven: while your mixture bakes, cut the Creme Eggs in half and crush just under half of the Mini Eggs you have. Make sure to keep the remainder of them whole.

Step eight: once the 20 minutes are up, take the tray out of the oven and press the Creme Egg halves into the mixture, making sure the innards are exposed.

Step nine: scatter the crushed Mini Eggs over the mixture whilst it's still warm and then place back in the oven for a further five minutes.

Step ten: once the five minutes are up, take the tray out of the oven and scatter the remaining, whole Mini Eggs over the top of the bake, gently pressing them into the surface while the brownie is still hot.

Step eleven: leave to cool slightly and then cut up into square and serve with a coffee or another beverage of your choice. More importantly, make sure you enjoy it!
