Blogmas Day 9 | A Recipe: Rudolph Brownies


Welcome to Blogmas day 9! I'll be uploading a Christmas-themed blog post every day on the run-up to Christmas Day, so keep checking back for some festive content every day. Today, I'm going to be telling you how you can make your very own Rudolph brownies for Christmas. So, let's get on with it, shall we?!

Serves: 16

Prep time: 25 mins

Cook time: 30-35 mins

Ingredients

*1 bag of plain pretzels
*1-2 bags/tubes of Smarties (preferably the festive Smarties as you'll get more red ones in there)
*Edible eyes (white with a black pupil)
*185g unsalted butter
*185g dark chocolate
*85g plain flour
*40g cocoa powder
*50g white chocolate
*50g milk chocolate
*3 large eggs
*275g golden caster sugar

Method

1. Cut the butter into small cubes and break the dark chocolate up and put in the same bowl

2. Fill a saucepan with hot water and put the bowl over the top to allow the butter and chocolate to melt gently - stir occasionally

3. Remove the bowl from the heat and cover it loosely with cling film. Place in the microwave for 2 minutes on high and then leave the melted mixture to cool to room temperature

4. Now is the time to preheat your oven to 180C/160C fan/gas mark 4

5. Line your tray with some baking paper and grease lightly

6. Take a medium bowl and sieve in the flour and the cocoa powder

7. Chop up the white and milk chocolate, making sure they're cut into chunks

8. Take a separate bowl and break the three eggs into it and then add the caster sugar, now whisk until it looks like a thick, creamy milkshake

9. Pour the cooled chocolate over the eggy mixture and then fold gently with a spatula - keep going until the mixture turns into a mottled dark brown colour

10. Take the flour and cocoa dry mix and resift it into the bowl with the eggy mixture in it, then fold gently until it looks gungy and fudgy

11. Take the white and milk chocolate chunks and stir those through the same mixture until they've been dotted throughout

12. Pour the mixture into the greased and lined tin and push it out to the edges and sides with a spatula

13. Put the mixture in the oven for between 30-35 minutes, making sure you're checking the brownies at around 25 minutes to make sure they're not over-baking. If the mixture wobbles in the middle when you move it, it's not quite done yet, so another 5 minutes should do the trick

14. When done, take the try out of the oven and leave the brownies to cool down completely in the tin

15. Once cooled, cut the brownies into rectangles and place on a cooling rack 

16. Now it's time to decorate! Place tow pretzels on the top left and top right corners, add the edible eyes and place the red Smartie in the middle, to look like a big red nose

17. Take your best Christmas serving plates and serve
