Blogmas (Day 16) | Honey & Spice Christmas Cookies


I love baking in general, but I love it more so when it's Christmas. You can get creative with flavours and spices, creating the ultimate concoction, imperative to baking the most delicious festive treats. I'm going to tell you how you can make these yourself, its so quick and simple, you'll wonder why you've never thought to make hem before!

Prep Time: 30 mins
Cook Time: 12-15 mins
Serves: Approx. 35

Ingredients

*100g golden caster sugar
*400g plain flour
*200g unsalted butter (at room temp)
*1 beaten egg
*2 tbsp. honey
*2 tbsp. all spice (containing cinnamon, nutmeg, ginger & coriander predominantly)

Method

1) Pre heat the oven to 180C/160F/Gas Mark 4.
2) Put the butter and the flour into one bowl, with your hands, rub the two together until it forms a crumb-like consistency.
3) Add the egg and stir well.
4) add the all spice, golden caster sugar and the honey.
5) Stir until it forms a soft dough.
6) Once it has, tip it out, roll it into a ball, wrap in cling film and put in the fridge to chill for 20-30 mins.
7) Once it's chilled, take it out of the fridge, flour a surface and roll out your dough to around 1cm thick.
8) Cut out festive shapes and spread out evenly on a baking tray, ensuring none of them are touching, then put in oven for 12-15 mins or until golden brown.
9) Leave to cool on the tray then store in a tin or a jar.
10) Enjoy with a hot chocolate, a festive latte or a glass of mulled wine for the extra Christmassy feeling.
